Wednesday January 23rd
Fish stew with garam masala spices, chick peas, onion, spinach and tomatoes - served with cilantro and garlic naan and some lemon juice. I loosely followed a recipe for this dish but changed around a lot of the ingredients. It tasted really good! I will definitely be adding (variations of) this recipe to my repertoire.
Thursday January 24th
I had a friend over who prefers more classical dishes (a.k.a. meat/fish + potatoes + vegetables) and I had some tartare sauce leftover from a visit to the fritterie the weekend before, so I made (storebought) battered fish with tartare sauce and lemon juice, potato wedges and broccoli.
Friday January 25th
I kinda made this dish up without following a recipe, but it was super delicious so I'll definitely be making it again (with some modifications, like using fresh mango instead of canned ...) ; onion, ginger, garam masala spices, vegan 'chicken strips', broccoli, mango and pineapple in coconut milk served with rice.
Saturday January 26th
I had friends over who brought leftover vegan pasta bolognese. Since the leftovers wouldn't be enough for 3 people, I also served a simple storebought tomato & basil soup as a starter. I also proceeded to make these vegan dishes non-vegan by adding cheese to EVERYTHING (the packet of cheese was already open and needed to get finished).
Sunday January 27th
I ate the leftovers of Friday's dinner (I live alone, so I usually eat every dish I make twice). It looked a whole less appetizing after having sat in the fridge and being reheated, but it still tasted good.
Monday January 28th
This was my interpretation of the Japanese dish 'nikujyaga' ; beef strips, potatoes, carrots, green beans and onion stewed in a mixture of water, sake, mirin, soy sauce and sugar served with rice. Unfortunately it didn't turn out as I had wanted it to and tasted quite bland. I think I might've used too much fluid? I'll need to try again another time ...
Tuesday January 29th
I follow a class on Tuesdays after work, so I needed something quick and easy for dinner. I had a huge lunch of leftover nikujyaga at work, so for dinner I just got a small cold pasta salad with sundried tomatoes, pine nuts, Prosciutto di Parma and Parmesan cheese from the snackbar next to my workplace.
