Vegan Tom Kha Kai Soup

Hey there - I know I am a little late, but better late than never I suppose :) I planned to cook this soup last Saturday but things got in the way, so I cooked it today.

It's been ages since I last posted, so let me quickly introduce myself: My name's Johanna and I'm from Germany!

So here's a "recipe" loosely based on the soup named tom kha kai, which is a Thai chicken soup. My family made this soup for ages at home. We used to call it "good mood"-soup (Gute Laune Suppe in German) when I was a child and it is still one of my favourite dishes. Since I'm vegan and never learned the recipe from my parents, it does taste quite different from their version - and most definitly from the original!

So here we go:

This is what I start with - lots of veggies, coconut milk, some Asian noodles (mie noodles in my case) and veggie stock (not pictured).

I start with boiling about 1 litre of water (and a wee bit more to make some tea!). I add some veggie stock to the boiling water.

I cut up all the veggies! Broccoli is one of my favourite vegetables so I use heaps.

I add all the veggies to the water and let it simmer for a while until they are all soft. I also add some canned sweet corn a bit later as it doesn't need to cook long.

While the veggies simmer I admire the kitchen towel I recently bought - as a Christmas-crazy dog person this is perfect.
They are all hecking adorable! Do you have a favourite? Mine might actually be the golden retriever one in the middle!

I also move all the scraps to the compost and clean up the kitchen space.

... I add the coconut milk. I used quite a bit so even though it does look quite soupy here, it was a bit too creamy. A little less coconut milk and a bit more water would have been good.

These are the things I used for seasiong - lime juice, soy sauce, mushroom soy sauce (which is super delicious!), not the hoisin sauce pictures but sweet indonesian soy sauce (kecap manis) and a bit of peperoncino for a little hotness. You would originally use real lime juice, kaffir lime leaves and lemongrass, but I didn't have these at home so I improvised. I'd say that anything lime and soy sauce would be most key to the taste :)

Well and that's the finished product! As I said it was a bit too creamy, but just the fact that I took a second helping even though I was already full should prove that it was hecking delicious :)

The amount I cooked should easily be enough for 2-3 people and I will finish mine tomorrow or even the day after :)
