An easy and versatile side dish!

My recipe submission is a super easy dish!
It's nothing crazy but you can always throw in other veggies or seasonings depending on what you like.
I started making this dish since I prefer spicier food and Thanksgiving tables usually never have spicy food!

-2 sweet potatoes
-2 bellpeppers
-1/2 of an onion (I prefer a sweet yellow onion for this recipe)
-1 tbsp garlic powder
-1 tbsp cajun seasoning
-1 tsp salt
-1 tsp pepper
-3 tbsp olive oil
Optional: 1/2 tbsp cayenne, paprika and/or red pepper flakes if you want it to be spicier

*Pre-heat oven to 400 degrees farenheit
1.) Peel and dice the sweet potatoes and add to a big bowl.

2.) Dice the bellpeppers and add to the same bowl with the sweet potatoes.

3.) Cut onion in half and dice to your liking. I prefer bigger pieces. Add onion to the same bowl.
I gathered up the seasonings that I needed as well :)

4.) Mix olive oil and seasonings with the veggies and stir together so everything is evenly coated.

5.) Line a baking sheet with parchment paper or lightly coat baking sheet with melted butter or olive oil to prevent the veggies from sticking. Then bake them for 35 minutes, tossing them around once about 15 minutes in.

It's done!

I will sometimes make this and put a fried egg on top for breakfast or put them in tacos mixed with black beans and salsa!
