My recipe submission is a super easy dish!
It's nothing crazy but you can always throw in other veggies or seasonings depending on what you like.
2.) Dice the bellpeppers and add to the same bowl with the sweet potatoes.
3.) Cut onion in half and dice to your liking. I prefer bigger pieces. Add onion to the same bowl.
I gathered up the seasonings that I needed as well :)
4.) Mix olive oil and seasonings with the veggies and stir together so everything is evenly coated.
5.) Line a baking sheet with parchment paper or lightly coat baking sheet with melted butter or olive oil to prevent the veggies from sticking. Then bake them for 35 minutes, tossing them around once about 15 minutes in.
I will sometimes make this and put a fried egg on top for breakfast or put them in tacos mixed with black beans and salsa!
